Recently I haven't baked anything for other people... its been for me. Trying new recipes or revisiting old favourites. Voila!

Purple Velvet

So! My latest creation is my mums wedding cakes...


Mum wanted a purple themed wedding so I had to come up with something good. At first I thought blueberry cheesecakes or Italian desserts of some kind. In the end though, the purple velvet won. 
It wasn't as easy as you'd think to make them purple though...
At first I tried mixing blues and reds, but they turned out brown, or murky green. It was weird. Then I tried a purple gel dye but that went pink. I almost gave up to be honest but then I found this little gem...

It holds its colour very well. So the mammoth bake-off began. I had bought enough ingredients to make thousands but hey. Here are the last few pictures.



In the end I made 120 purple velvet cupcakes and they have all been eaten! Happy baking! xx

Happy National Cupcake Week!

According to Ocado.com it is National Cupcake week, so I thought I'd share some of the other creations I have made in the past few months.

The History of Jessi-cake

I remember the first time I independently baked some cupcakes, I bought a packet mix from Tesco and in true Jessi style I got all my equipment ready, pre-heated the oven, laid out all three necessary ingredients and both packets and set to work. 
It was a disaster, I baked the icing with an egg and tried to ice it with cake mix, I was 11. 


Since that day I built up a complex about baking and steered clear of it. I mean, who cannot tell the difference between sugar and flour?


But then I grew up, moved into my own flat and bravely experimented with baking again. Actual baking, no packet mix in sight. I started simple, vanilla sponge with plain but coloured icing. It was a success, the sponge moist and the icing sweet but not sickly. I had discovered a new hobby. 


Which is exactly what Jessi-cakes is all about. I love baking, especially when it's for someone else. So far Jessi-cake creations have made an array of celebratory cakes for myself and those I love and if that's all this is and will ever be then I'll happily bake away.
